Allagash Coolship Pomme

To make Coolship Pomme, we selected specific batches of our spontaneously fermented Coolship beer-that had fermented in oak barrels for about two years-and added a medley of freshly picked Golden Russet, Ashmead's Kernel, Northern Spy, and Winesap apples from a local farm. We then aged that mixture for an additional four months. The result: a well-rounded and complex ale with notes of crisp apple, oak, white pepper, apricot, and a hint of funk-all with a wonderfully dry finish.
